Easy Blueberry Muffin Recipe
Mostly berries with a bit of buttery cake to hold them together
BLUEBERRY MUFFIN INGREDIENTS
- 5 tablespoons butter
- 1/2 cup sugar
- zest from 1/2 a lemon
- 75g sour cream
- 100g plain greek yogurt*
- 1 egg
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups flour
- 1 1/2 cups blueberries, fresh or frozen, unthawed
- 2 tablespoons turbinado sugar (optional)
BLUEBERRY MUFFIN RECIPE INSTRUCTIONS
Preheat oven to 375F
Melt butter and combine ingredients through salt. Gently fold in flour and berries.
Batter will be THICK. Divide batter between lined nonstick muffin tins using a cookie scoop if you have one. Sprinkle turbinado sugar on each muffin.
Bake for 25-30 minutes. Cool in pan 10 minutes, then remove to finish cooling.
NOTES ON BLUEBERRY MUFFIN RECIPE
*Can use all sour cream for a richer result.
