Penne With Basil, Fresh Tomato, and Sausage

INGREDIENTS

  • 1 lb uncooked pasta (penne is perfect)
  • 1 lb sweet Italian sausage
  • 2 onion, sliced vertically
  • 4 cloves garlic, minced
  • 2  1/2 pounds fresh tomatoes, seeded and chopped
  • 2 ounce grated Romano cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup fresh basil, torn

DIRECTIONS

Cook pasta in salted water until al dente. Drain and set aside.

Heat a large, tall sided sauté pan over medium-high heat.

Take casings off the sausage.

Add sausage and onion to pan; cook 5 minutes, breaking up sausage until it is crumbled. Add garlic and cook for 2 minutes.

Add tomatoes and cook for 5-7 minutes.

Turn off the heat, and incorporate the cooked pasta into the sauce. Stir in basil, salt, pepper, and half the cheese.

Sprinkle remaining cheese over the top when serving.

Nice touch: Garnish with a sprig of basil.
