Instant Pot Savory Steel Cut Oats and Eggs Recipe

Bone broth adds body, umami, and additional protein to steel cut oats. Eggs and oats both cook in the Instant Pot at the same time.

INGREDIENTS – Steel Cut Oats and Eggs

  • 1/2 cup steel cut oats
  • 1 cup unsalted homemade chicken broth
  • 1/2 cups water
  • 1/2 tsp salt
  • pinch freshly ground black pepper
  • 2 eggs
  • parsley for garnish

DIRECTIONS – Steel Cut Oats and Eggs

Add oats, broth, water, salt and pepper to the Instant Pot and stir. Place a rack over the oats and put 2 eggs in shell on the rack, being careful that they are not touching.* 

Seal lid and set to 5 minutes** manual high pressure. 

Allow the pressure to release naturally for 5 minutes, then release any remaining pressure manually.

Place eggs in a bowl of ice water for 2 minutes. Meanwhile, stir the oats, taste and adjust seasoning. Peel eggs and serve. 

*Can poach the eggs if you prefer. Rub silicone poaching cups with butter, carefully crack one egg into each, then put them on a rack above the oats. 

**7 minutes if you prefer softer oats and hard boiled eggs
