Instant Pot Cheeseburger Mac & Cheese

Easy, fast, tasty. A fam fave. 

INGREDIENTS

  • 1 lb rice pasta (can use regular pasta if you like)
  • 1 tablespoon bacon fat or olive oil
  • 1 lb 95/5 ground beef
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon fresh garlic, minced
  • 1 cup petite diced tomatoes, drained or your favorite marinara sauce
  • 1 1/2 cups whole milk
  • 2 cups chicken broth (homemade is best) or water
  • additional broth or water to cover pasta
  • 8 oz shredded cheddar cheese (about 2 cups)

DIRECTIONS

Using your Instant Pot’s  sauté function, brown ground beef in bacon fat on high heat, stirring to crumble with a metal spoon. Season with salt, pepper and garlic. Cook one more minute. Add tomatoes and milk and stir.

Pour dry pasta over meat mixture in the IP. Do not stir. Cover with broth or water, adding more if needed to ensure the pasta is covered. Do not stir!

Cook on manual high for 3 minutes, then quick release of pressure.

Remove lid and stir to combine. Add cheese one handful at a time, stirring in between to melt.

Note: If using regular pasta, adjust time in the recipe to one half the cooking time suggested on the box for your pasta of choice.
