Everyone’s Favorite Taco Beef
Perfect for taco night and comes together while the yellow rice cooks in your instant pot. It’s really good, even pickiest eaters ask for a second helping.
INGREDIENTS
- 1 lb 96% lean ground beef
- 1/2 large onion, chopped
- 2 cloves garlic, minced
- 1/2 cup petite diced tomato
- 1/2 bell pepper, diced (any color, red is sweetest)
- 1/4 cup tomato sauce (leftover pasta sauce or juice drained from tomatoes is fine)
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/2 tsp chili powder
- 1-2 teaspoons salt or to taste
- 1/2 tsp freshly ground pepper
- 1/2 cup homemade chicken broth (or water)
- 1 bay leaf
- chopped cilantro for garnish
DIRECTIONS
Cook ground beef over medium high heat until no longer pink.
Add onion, garlic, tomato, salt, pepper, cumin, and bay leaf. Add tomato sauce and chicken broth and simmer until thick and all liquid has evaporated, about 15 minutes.
