Taco Night Yellow Rice

So flavorful. Goes well in taco salads, bowls, as a side with beans, etc. Easy to prepare when making taco beef since the onion and tomatoes are already on hand.

INGREDIENTS

  • 1 cups uncooked basmati rice
  • 1 tsp olive oil
  • 1/4 cup onion, chopped
  • 2 garlic cloves, minced
  • 1/4 cup petite diced tomato, or 1 small tomato diced
  • 1.5 cups homemade chicken broth (or water with bullion)
  • 1 packet Sazon con Azafran
  • 1/2 tsp salt

DIRECTIONS

Heat oil in the instant pot on saute, medium. Soften onions 3 minutes. Add garlic and tomatoes and cook 1 minute more.

Stir in sazon and salt. Add rice and cook 1 minute until grains of rice are covered in oil.

Add chicken broth and press the “rice” button or use manual low 12 minutes, natural pressure release.

Stovetop preparation: cook rice covered with the amount of liquid and time called for on package directions.
