Split Pea Soup with Andouille Chicken Sausage Recipe for Instant Pot, Stovetop or Slow Cooker

Hearty split pea soup gets a spicy kick from chicken andouille sausage. Add 2 links for a mild heat, up to 4 for maximum flavor.

INGREDIENTS

  • 1 lb dry green split peas
  • 1 teaspoon olive oil
  • 2 carrots, chopped
  • 1 onion, diced
  • 3 stalks celery, diced
  • 3 cloves garlic, minced
  • 3 cups unsalted chicken broth (can substitute water)
  • 3 cups water
  • 1/4 teaspoon thyme
  • 1 bay leaf
  • 2-4 links (4 = spicy!) smoked andouille chicken sausage (used Trader Joe’s here), diced
  • 1 1/2 teaspoons salt or to taste
  • 1/4 teaspoon freshly ground black pepper
  • diced sausage for garnish (optional)

Instant Pot Split Pea Soup with Andouille Chicken Sausage Recipe Instructions

Rinse split peas. Heat oil on medium heat in the instant pot using the sauté setting. Cook carrots, onions, celery and garlic for 6-8 minutes or until soft.

Add peas, water, chicken broth, thyme, bay leaf and sausage. Seal cover and cook on high pressure for 20 minutes. Allow natural pressure release, then open and remove the bay leaf.

Stovetop Split Pea Soup with Andouille Chicken Sausage Recipe Instructions

Rinse split peas. Heat oil over medium heat in a large pot. Cook carrots, onions, celery and garlic for 6-8 minutes or until soft.

Add peas, water, chicken broth, thyme, bay leaf and sausage. Increase water by one cup. Cover and simmer on low in a for 2 1/2- 3 hours or until peas are soft. Add additional water if needed

Slow Cooker Split Pea Soup with Andouille Chicken Sausage Recipe Instructions

Rinse split peas. Heat oil over medium heat in a large pot. Cook carrots, onions, celery and garlic for 6-8 minutes or until soft.

Transfer vegetable mixture to a crock pot. Add peas, water, chicken broth, thyme, bay leaf and sausage. Increase water by one cup. Cover and cook on high for 5 hours or low for 9 hours.
