Roasted Parmesan Green Beans and Tomatoes

More delicious than green beans  should be

INGREDIENTS

  • 1 pound green beans, washed and trimmed or 1 bag frozen thin green beans
  • 1 container grape tomatoes, sliced in half (1-2 cups)
  • 1 tablespoon olive oil
  • 4 cloves of garlic, finely minced
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1 tsp Parmesan cheese

DIRECTIONS

Preheat oven to 400 degrees F.

Place green beans and tomatoes in your largest bowl with olive oil, garlic, salt and pepper; toss to coat.

Spread mixture on baking sheet and bake for 20-25 minutes or until green beans are slightly charred. Allow to cool slightly, then season to taste and sprinkle with parmesan.
