Oven Baked Truffle Fries

Truffle up buttercup

INGREDIENTS

  • 2 lbs russet or yukon gold potatoes (about 4 medium)
  • 1 tablespoon melted duck or chicken fat or olive oil
  • 1-1 1/2 teaspoons truffle salt or your favorite salt

DIRECTIONS

Preheat oven to 400F. Cut the potatoes into french fry shape. Line a good size baking sheet with parchment paper.

Add potatoes and oil in a large bowl and toss to coat evenly.

Arrange fries on parchment in a single layer. Try not to let them to touch.

Bake until golden and crispy, 40-45 minutes, turning over at the 30 minute mark. Remove from oven and sprinkle with salt to taste.

Note: I like to use truffle salt here rather than truffle oil because most truffle oil is artificially flavored. I found this salt after reading about how Oprah travels with it in her purse!
