Jambalaya

Not “authentic” but whatevs it’s pretty yummy

INGREDIENTS

  • 1 onion – diced
  • 1 bell pepper – diced
  • 3 stalks of celery – diced
  • 3 garlic cloves – minced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 package sweet italian turkey sausages
  • 12oz frozen peeled cooked shrimp
  • 1 can petite diced tomatoes – undrained
  • 2 cups chicken broth
  • 1.5 cups long grain white rice (I use basmati)
  • 2 teaspoon cajun seasoning
  • 1 teaspoon chili powder
  • 1 1/2 tablespoons soy sauce
  • 1 1/2 tablespoons worchestershire sauce

DIRECTIONS

Turn on Instant Pot to medium sauté setting, add butter and oil.

When hot, add sliced sausage.

Saute 4 minutes or until slightly browned.

Add onion, bell pepper and celery, adjust saute temp to high, and cook 5-7 minutes.

Add garlic and cook additional minute, stirring to prevent burning.

Season with Creole seasoning and chili powder; stir well.

Add soy sauce, worchestershire sauce, chicken broth, tomatoes and rice. Stir.

Place lid on Instant Pot, making sure vent is closed.

Turn to high on manual setting and set for 8 minutes.

When time is up, quick release steam and remove lid.

NOTES

Can stir in 1 cup cauliflower rice without noticing it.
