Instant Pot Porcini Truffle Risotto
This risotto recipe is ridiculously easy and hands off, but tastes like you were tending to it for an hour. Goes great with short ribs.
INGREDIENTS
- 4 1/4 cups unsalted chicken broth (homemade is best)
- 2 tablespoon butter
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 2 cups arborio rice
- 1/2 teaspoon truffle salt plus more to taste
- 1/2 teaspoon porcini mushroom powder or TJs umami powder
- 1/4 teaspoon ground black pepper
- 1/4 cup dry white wine
- 3/4 cup grated Parmesan Cheese
DIRECTIONS
Microwave broth for 2-3 minutes or until hot.
Saute onion in butter and cook until soft, about 5 minutes. Add garlic and thyme and cook about 1 minute more. Add rice and stir until toasted and sort of translucent.
Deglaze with wine. Add warm broth, truffle salt, anf porcini powder. Put lid on Instant Pot and seal. Cook on Manual, High for 5 minutes, quick release.
Stir in Parmesan. Season with additional salt and pepper to taste.
