Fresh Basil Pesto Recipe
Freezing basil pesto is a great way to preserve fresh basil for use all year 🌱
INGREDIENTS – Fresh Basil Pesto Recipe
2 ounces (about 6 cups) basil leaves
1/4 cup pine nuts, or walnuts
1/4 cup grated parmigiano reggiano
1 garlic clove
1/2 teaspoon salt
1/2 cup extra-virgin olive oil
DIRECTIONS – Fresh Basil Pesto Recipe
Pulse the first 5 ingredients in a food processor.
With the machine running, add the olive oil in a slow stream through the opening until the pesto looks just right.
Pesto is best eaten right away. If you want to store it in the fridge for a day or two, put it in a small jar and cover with olive oil. Pesto freezes beautifuly for longer storage.
Consider freezing in an ice cube container. The cubes are a perfect size for adding to pasta sauces and soups. Just plop one in still frozen.
