Deconstructed Cabbage Rolls for Instant Pot or Stovetop

Even non-fans of cabbage love this hearty bowl

INGREDIENTS

  • 1lb 93% ground beef
  • 1 medium onion, diced
  • 2 carrots, diced
  • 4 cloves garlic, minced
  • 1 cup chicken or beef stock, preferably homemade
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp thyme
  • 1 tsp oregano
  • 1 tbsp dried parsley
  • 1 tbsp paprika
  • 1 1/4 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 lbs 1/4 inch diced potatoes
  • 1  28oz can diced tomatoes with liquid
  • 1 small cabbage (chopped)

DIRECTIONS

Instant Pot: Sauté beef on high heat, stirring to crumble. Add onion, carrots and garlic, and cook until beef is cooked and vegetables are soft. Stir in broth and seasonings through pepper.

Layer potatoes on top of the beef mixture. Place tomatoes on top of potatoes. Top everything with chopped cabbage. Do not stir.

Seal lid and cook on High pressure for 5 minutes, allowing pot to naturally release pressure for at least 10 minutes.

Open pot and stir to combine. Adjust seasonings to taste.

Stovetop: In a large pot, follow instructions above through adding the cabbage. Stir everything to combine. Simmer, covered, for 15-20 minute.
