Butternut Squash Soup Recipe For Instant Pot, Slow Cooker, or Stovetop

Impossible to overstate how good this soup tastes

INGREDIENTS FOR BUTTERNUT SQUASH SOUP RECIPE

  • 20oz peeled and cut butternut squash
  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 4 cups unsalted homemade chicken broth
  • 1 1/2 teaspoons iodized salt or to taste
  • 1/2 teaspoon white pepper (black pepper works too but will be visible in the soup)
  • pinch nutmeg
  • chopped parsley for garnish (optional)

INSTANT POT BUTTERNUT SQUASH SOUP RECIPE INSTRUCTIONS

Using the Instant Pot melt butter on the sauté low setting. Add onion and cook until translucent, about 7 minutes. Add squash and broth. 

Seal lid and set to 8 minutes high pressure. Allow pot to release pressure naturally.

Open lid and puree the soup either with an immersion blender in the pot or remove the soup carefully to a blender with a vented lid. Return soup to pot, add salt, pepper and nutmeg. Stir and adjust seasoning to taste. 

STOVETOP BUTTERNUT SQUASH SOUP RECIPE INSTRUCTIONS 

In a large pot, melt butter over low heat. Add onion and cook until translucent, about 7 minutes. Add squash and broth. 

Simmer, covered, about 20 minutes or until squash is tender. 

Open lid and puree the soup either with an immersion blender in the pot or remove the soup carefully to a blender with a vented lid. Return soup to pot, add salt, pepper and nutmeg. Stir and adjust seasoning to taste. 

CROCK POT BUTTERNUT SQUASH SOUP RECIPE INSTRUCTIONS 

Add squash through chicken broth to the slow cooker, increasing broth by 1/2 cup.

Cook on high for 3-4 hours or on low for 6-8 hours. 

Open lid and puree the soup either with an immersion blender in the pot or remove the soup carefully to a blender with a vented lid. Return soup to pot, add salt, pepper and nutmeg. Stir and adjust seasoning to taste. 

NOTES FOR BUTTERNUT SQUASH SOUP RECIPE

This recipe uses homemade unsalted chicken broth. If you use store-bought broth, use a bit less salt than the recipe calls for.
