Baked Pears and Blueberries Recipe

When fruit in the fridge is a bit past it’s prime, rather than toss it out it’s fun to bake it.

Works with pears, apples, stone fruit and berries in just about any combo. Baked fruit is fun to add to yogurt, salads, oatmeal, ice cream, or to eat on its own. While I usually don’t add sugar, feel free to sprinkle some on before baking if that’s your thing.

INGREDIENTS

  • 1 pear
  • 1/4 to 1/2 cup blueberries, fresh or frozen
  • pinch of good salt
  • pinch freshly ground black pepper
  • sugar (optional)

DIRECTIONS

Preheat oven to 375F.

Half pear lengthwise and scoop out the little core with a small round metal spoon. Place the pear in a small baking dish (these oven-safe meal prep containers are perfect). Season with salt and pepper for an sophisticated, savory bite, or with a little sugar if you prefer something sweet. 

Pour blueberries over pears, allowing them to spill over the side. 

Bake for 30-35 minutes, then remove from oven and allow to cool.
