Baked Italian Zucchini Fries
If you are fortunate (or unfortunate) enough to have an abundance of zucchini and/or yellow squash, this is a great way to use it. These fries are hands down the tastiest way to eat zucchini. Great as a side dish or snack on their own. Don’t omit the marinara sauce, it makes the dish *chef kiss*
INGREDIENTS
- 2 large or 4 small zucchini and/or yellow squash, each cut into 3 pieces crosswise, then, quartered or cut into eights lengthwise, sepending on size
- 1/4 cup freshly grated pecorino romano cheese
- 1/4 cup panko
- 1 1/2 teaspoons italian seasoning
- 1/4 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 1/2 tablespoons olive oil
- marinara sauce for dipping
DIRECTIONS
Preheat oven to 350F. If you have a convection oven use that. Can also be made in batches in an air fryer.
In a small bowl, combine romano cheese, breadcrumbs, italian seasoning, garlic powder, salt and pepper.
In a large bowl, place squash and olive oil. Toss to combine.
Dredge squash in breadcrumb mixture and place in a single layer onto an extra large sheet pan lined with parchment paper. Bake 15-20 minutes or until tender.
Serve with marinara sauce for dipping.
