Arugula, Orange and Goat Cheese Salad
Sweet, tangy, creamy, rich components compliment the peppery greens
INGREDIENTS
Salad:
- 2 fresh oranges
- 8 ounces arugula
- 3 ounces goat cheese
- 1/2 cup walnuts
Dressing:
- 4 tablespoons Olive Oil (use a brand that prints the harvest date on the bottle to ensure it’s fresh)
- 1 1/2 tablespoons White Balsamic Vinegar
- 2 tablespoons reserved juice from oranges
- 1/8 teaspoon dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground Black Pepper (plus more to taste)
- pinch of sugar
DIRECTIONS
Section oranges with a paring knife over a bowl to catch the juice. Put juice and orange sections aside.
Combine all the ingredients for the dressing in a jar with a tight lid. Shake to combine.
In a large salad bowl, combine arugula a dressing. Toss to combine. Top with oranges, goat cheese and walnuts.
NOTES
The arugula with its slight bitterness, sweet and acidic orange, creamy cheese and earthy walnuts make a lovely combination.
